A simple and easy go-to gluten free meal of mine is a tomato, mozzarella salad. And what better way to present it, than in the skin of the empty avocado.
I won’t lie, the shopping list for this meal isn’t necessarily the cheapest. Avocados alone are somewhere around $2-$3 and then the mozzarella can also be on the pricier side depending on the type you buy. However, all of the ingredients can be altered. It is all up to preference. Usually, the collection of ingredients I grab consists of:
- 1 whole avocado
- Several diced baby tomatoes
- Small, fresh mozzarella balls, which I cut into small pieces
- 1/3 cup of a red onion, diced into small pieces
- and a small amount of olive oil.
Really it just comes down to emptying out the insides of the avocado and mixing all of the ingredients together. Then you add any salt and pepper you may want, scoop it into the halved avocado skins, drizzle a little olive oil on top and serve! Its healthy, tasty, and colorful.
